Thank you Harleston Towles and Rooting Down Farms!
The meaty king trumpet mushrooms in this week’s Bag lend chewy texture to any main course. I simply sauteed mine with minced shallot and garlic in good olive oil and a pat or two of sweet butter.
I love this recipe for braised flat beans and tomatoes from Heathglen’s Farm to Jar. It has the flavor profile of a ratatouille, without as many steps.
A quick search of sweetgrass + grits will take you to plenty more recipes—all curated with an eye toward the weekly Twenty Bag harvest.
Harleston’s storage tips: If greens or herbs of any kind begin to wilt at any point or at pick up, put them in a big bowl of ice water for 20-30 minutes. Almost all produce is washed and should go in the refrigerator. Arugula can stay in it's own bag. Tomatoes on the counter, especially if they need to ripen. In the fridge in the drawer if they are dark red. Eggplant, beans, summer squash, and scallions can all go in a plastic bag of sorts in the fridge. Mushrooms can stay in their paper bag in the fridge. Kabocha pumpkin on the counter, or the porch
